- Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
- Blanch the trimmed green beans in boiling salted water for about 4–5 minutes, until barely tender. Drain them very well.
- Melt the butter in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes.
- Add the shredded cabbage and cook for 6–8 minutes, stirring occasionally, until it begins to soften but is not mushy.
- Stir together the condensed cream of mushroom soup, milk, salt, pepper, and about 1 cup of the shredded cheddar.
- Combine the cooked cabbage, green beans, and cheese sauce. Transfer the mixture to the prepared baking dish.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and sprinkle the remaining cheddar and crispy onions over the top. Bake for another 10–15 minutes, until bubbling and lightly browned.
- Rest the casserole for 5–10 minutes before serving so the sauce can settle slightly.
Notes
Drain the blanched green beans and softened cabbage thoroughly to prevent a watery casserole. Shred cheddar from a block for smoother melting, and do not fully cook the cabbage before baking. Canned green beans may replace fresh; use two 14.5-ounce cans and drain them thoroughly.
