  • 1 small head, about 1 1/2-2 lb Small head cabbage, shredded or chopped
  • 1 lb or 16 oz package Green beans, trimmed and cut, or frozen green beans
Cheese Sauce
  • 1 10 3/4 oz can Condensed cheddar cheese soup
  • 1/2 cup Milk
  • 1/2 cup Chopped onion
  • 1/4 teaspoon Black pepper
  • 1 cup Shredded sharp cheddar cheese, divided
Seasoning and Pan Prep
  • As needed Salt
  • As needed for greasing the baking dish Butter or cooking spray

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 2-quart casserole dish with butter or cooking spray.
  2. Bring a large pot of lightly salted water to a boil. Cook the cabbage for about 5–7 minutes and cook fresh green beans until just tender, allowing slightly longer for the beans if needed; the total cooking or blanching time is about 8–10 minutes.
  3. Drain the cabbage and green beans extremely well. If using frozen green beans, thaw them completely and drain them before continuing.
  4. In a large bowl, stir together the condensed cheddar cheese soup, milk, chopped onion, black pepper, and 1/2 cup of the shredded cheddar cheese.
  5. Fold the drained vegetables into the cheese mixture until the cabbage and green beans are evenly coated. Transfer the mixture to the prepared casserole dish.
  6. Sprinkle the remaining 1/2 cup shredded cheddar evenly over the top. Bake uncovered for 25–30 minutes, until hot, bubbling, and lightly browned.

Notes

Drain the vegetables thoroughly so excess water does not thin the sauce or cause the casserole to separate. Freshly shredded sharp cheddar melts and tastes best; a small pinch of garlic powder or paprika may be added if desired.
