Step-by-Step
- Heat the oven to 375°F and lightly grease a 9 x 13-inch baking dish.
- In a large bowl, stir together the condensed cream of chicken soup, sour cream, milk, garlic powder, onion powder, kosher salt, and black pepper until smooth.
- Add the cooked shredded chicken, frozen mixed vegetables, and about 1 cup of shredded cheddar cheese. Stir gently until the filling is evenly combined.
- Spread the chicken mixture evenly in the prepared baking dish.
- Arrange the frozen tater tots in a tight single layer over the filling. Do not thaw them first.
- Bake uncovered for 40 to 45 minutes, until the filling is hot and bubbling and the tater tots are browned and crisp.
- Sprinkle the remaining cheddar cheese over the tater tots and bake for another 5 to 10 minutes, until the cheese has melted. Broil briefly if a darker top is preferred, watching closely.
- Let the casserole rest for 5 to 10 minutes before serving. When reheating or preparing with cooked chicken, check that the center reaches 165°F.
Notes
Use rotisserie chicken for a convenient shortcut, and keep the tater tots frozen for the crispest topping. Monterey Jack or Colby-Jack may replace part of the cheddar, and cream of mushroom soup can replace cream of chicken soup.
