- Heat the oven to 350°F and line two 12-cup muffin pans with paper liners.
- Prepare the white cake mix with the water, vegetable oil, and eggs. Beat according to the package directions, usually for about 2 minutes on medium speed.
- Divide the batter evenly among the 24 liners, filling each cup about two-thirds full.
- Bake for 18-22 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean.
- Cool the cupcakes in the pans for about 5 minutes, then transfer them to a rack and cool completely.
- Tint portions of the vanilla frosting red and blue with gel food coloring, leaving some frosting white. Pipe or spread the frosting onto the completely cooled cupcakes.
- Roll the red, white, and blue fondant thinly on a lightly cornstarch-dusted surface. Cut matching red and white circles for the shield layers, then add a smaller blue circle in the center.
- Cut small white stars from fondant or prepare purchased star sprinkles. Place one star on each blue center to complete the shield design.
- Attach each fondant shield to a frosted cupcake with a small dab of frosting or royal icing. Add red, white, or blue sprinkles if desired.
- Let the decorations set before serving. For easier decorating, prepare the shields ahead and let them firm up on parchment for 30-60 minutes.
Notes
The cupcakes must be completely cool before frosting or the frosting may soften and the fondant shields may slide. Keep unused fondant covered so it does not dry out. Gel coloring is preferred over liquid coloring because it creates strong red and blue shades without thinning the frosting.
