Buffalo Onion Ranch Dip with Chicken

A hot, creamy chicken dip combining Buffalo sauce, ranch dressing, sautéed onion, cream cheese, sharp cheddar, and optional blue cheese. It makes about 3 cups and is ready in approximately 30–40 minutes.

  • 1/2 cup Ranch dressing
  • 1/2 cup Buffalo-style hot sauce
  • 1 cup Sharp cheddar cheese, shredded and divided
  • 1/2 cup Yellow onion, finely diced

  • 1/4 cup Blue cheese, crumbled
For Cooking
  • 1 tablespoon Butter or neutral oil
Optional Garnishes
  • As needed Sliced green onions, extra cheddar, blue cheese, or ranch drizzle

Method
 

Step-by-Step
  1. Heat the oven to 350°F. Melt the butter or heat the neutral oil in a small skillet over medium heat, then cook the finely diced onion for 4–6 minutes until soft without letting it brown heavily.
  2. In a mixing bowl, stir together the softened cream cheese, ranch dressing, Buffalo sauce, and 1/2 cup of the shredded cheddar until mostly smooth. Add the shredded chicken, sautéed onion, and optional blue cheese, mixing until evenly combined.
  3. Transfer the mixture to an 8-inch square baking dish, 9-inch pie plate, or similar small casserole dish. Spread it into an even layer so the center and edges warm at the same rate.
  4. Sprinkle the remaining 1/2 cup shredded cheddar over the top. Bake uncovered for 20–25 minutes, until the dip is bubbling around the edges and fully melted in the center.
  5. Let the dip rest for 5 minutes before serving so it thickens slightly and is easier to scoop. Finish with optional green onions, blue cheese, extra cheddar, or a drizzle of ranch.

Notes

Use freshly cooked or rotisserie chicken when possible, and drain canned chicken thoroughly if that is your only option. For a milder dip, use 1/3 cup Buffalo sauce; for a hotter, sharper dip, increase it to 3/4 cup. Assemble up to 24 hours ahead, refrigerate, and add approximately 5–10 minutes to the baking time when baking from cold.
