  • 1/2 cup Panko breadcrumbs

  • 2 Garlic cloves, minced
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 2 tablespoons Buffalo-style hot sauce
Sauce
  • 6 tablespoons Remaining buffalo-style hot sauce
  • 2 tablespoons Unsalted butter, melted
Serving
  • 2 tablespoons Fresh parsley or green onion, chopped
  • as needed Ranch or blue-cheese dressing
  • optional Blue cheese crumbles, celery sticks, or carrot sticks

Method
 

Step-by-Step
  1. Heat the oven to 400°F. Line a rimmed baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, egg, onion, garlic, kosher salt, black pepper, and 2 tablespoons of buffalo sauce. Mix just until the ingredients are combined, taking care not to overwork the chicken.
  3. Form the mixture into approximately 20 to 24 meatballs, using about 1 1/2 tablespoons per meatball. Arrange them on the prepared baking sheet with space between each one.
  4. Bake for 18 to 22 minutes, or until the meatballs are browned and the centers reach 165°F on an instant-read thermometer.
  5. While the meatballs bake, stir the remaining buffalo sauce with the melted butter, if using. This creates a glossy, rich coating that clings to the finished meatballs.
  6. Toss the cooked meatballs with the buffalo sauce mixture or brush the sauce over each one. Garnish with parsley or green onion, then serve immediately with ranch or blue-cheese dressing.

Notes

Ground chicken is soft and sticky, so lightly oil your hands or use a small cookie scoop for easy portioning. Sauce the meatballs after baking so they brown properly and the buffalo sauce does not scorch. Always verify that the centers reach 165°F. For a milder version, replace part of the buffalo sauce with barbecue sauce or choose a mild wing sauce.
