Ingredients
  

Crispy Prosciutto
  • 8 slices Thin prosciutto slices
Burgers
  • 1 1/2 pounds Ground beef, preferably 80/20
  • 1/2 cup Finely grated Parmigiano-Reggiano or Parmesan cheese
  • 2 cloves Garlic, grated or finely minced
  • 1/4 cup Fresh basil, finely chopped
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 4 slices, about 4 ounces total Fresh mozzarella
  • 4 rolls Ciabatta rolls or sturdy hamburger buns
  • as needed Olive oil for brushing the rolls
Bruschetta Topping
  • 2 large tomatoes Large ripe tomatoes, seeded and chopped
  • 1 small clove Garlic, finely minced
  • 2 tablespoons Extra-virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 2 tablespoons Fresh basil, finely chopped
  • 1/4 teaspoon Kosher salt
  • 1/8 teaspoon Black pepper

Method
 

Step-by-Step
  1. Combine the chopped tomatoes, minced garlic, extra-virgin olive oil, balsamic vinegar, basil, salt, and pepper in a bowl. Let the mixture stand while preparing the burgers, then drain off excess liquid before assembling.
  2. Heat the oven to 400°F. Arrange the prosciutto in a single layer on a parchment-lined baking sheet and bake for 6 to 8 minutes, until browned and crisp; it will firm further as it cools.
  3. Gently mix the ground beef, Parmesan, grated garlic, chopped basil, kosher salt, and black pepper. Divide the mixture into four patties about 3/4 inch thick, making a small indentation in the center of each.
  4. Grill or cook the patties in a hot skillet over medium-high heat for approximately 4 to 5 minutes per side for medium, or until the desired doneness is reached. During the final minute, place one mozzarella slice on each patty, cover briefly, and cook until melted; ground beef should reach 160°F internally.
  5. Lightly brush the cut sides of the ciabatta rolls with olive oil. Toast them on the grill or in a skillet until lightly browned and crisp around the edges.
  6. Place each burger on a toasted roll and spoon the drained tomato bruschetta over the melted mozzarella. Finish each sandwich with one or two pieces of crispy prosciutto and serve immediately.

Notes

Bake the prosciutto separately so it stays crisp and does not make the buns greasy. Seed and drain the tomatoes to reduce sogginess. Handle the beef gently for tender patties, and refrigerate leftovers promptly.
