Bruschetta Grilled Shrimp

Large shrimp are marinated with garlic, lemon, olive oil, and Italian seasoning, then grilled and finished with a fresh tomato-basil bruschetta topping. Serve on its own or with toasted baguette slices.

Ingredients
  

For the Shrimp
  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Extra-virgin olive oil
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • As needed Lemon wedges
For the Bruschetta Topping
  • 2 cups Ripe tomatoes, seeded and finely diced
  • 1/4 cup Red onion, finely diced
  • 1/3 cup Fresh basil leaves, thinly sliced
  • 1 clove Garlic, finely minced
  • 1 tablespoon Extra-virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1/4 teaspoon Kosher salt
  • 1/8 teaspoon Black pepper
Optional Serving Ingredients
  • 1 small baguette Small baguette, sliced and toasted
  • 1–2 tablespoons Balsamic glaze

Method
 

Step-by-Step
  1. Seed and finely dice the tomatoes. Combine them with the red onion, sliced basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper, then stir gently.
  2. In a separate bowl, whisk together the shrimp olive oil, garlic, lemon juice, Italian seasoning, salt, and black pepper. Toss the shrimp in the marinade and refrigerate or rest for 15 to 30 minutes.
  3. Preheat a grill or grill pan to medium-high heat, approximately 400–450°F. Thread the shrimp onto soaked wooden skewers or prepare a grill basket if needed.
  4. Grill the shrimp for 2 to 3 minutes per side, turning once. Remove them as soon as they are opaque and curled into a loose C shape.
  5. Drain excess liquid from the tomato mixture if needed. Spoon the bruschetta topping over the grilled shrimp and serve with lemon wedges, toasted baguette slices, and balsamic glaze if desired.

Notes

Do not marinate the shrimp longer than 30 minutes because the lemon juice can soften the texture. Large shrimp are easiest to grill without overcooking. If using wooden skewers, soak them in water for at least 30 minutes.
