  • 1 teaspoon Maple flavoring or maple extract

Step-by-Step
  1. Heat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners.
  2. Whisk the flour, brown sugar, baking powder, and salt together in a large bowl.
  3. In a separate bowl, whisk the egg, milk, melted butter, and maple flavoring until blended.
  4. Add the wet mixture to the dry ingredients and stir only until the flour is moistened. A few small lumps are fine.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 20 to 25 minutes, until the tops are lightly browned and a toothpick inserted in the center comes out clean.
  7. Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack.

Notes

Do not overmix the batter, since excessive stirring can make muffins dense. For a stronger maple taste, use pure maple syrup or a good-quality maple extract; chopped pecans or walnuts and a maple glaze are optional variations.
