Breakfast Parfaits

These easy breakfast parfaits combine Greek yogurt, fresh berries, crunchy granola, and a touch of honey in colorful layers. They make 4 servings and require 10 minutes of preparation with no cooking.

Ingredients
  

Yogurt Mixture
  • 3 cups Plain or vanilla Greek yogurt
Fruit and Crunch
  • 2 cups Fresh berries, such as strawberries, blueberries, raspberries, or blackberries
  • 1 1/2 cups Granola
Sweetener
  • 2 tablespoons Honey or maple syrup, plus more to taste
Optional Additions
  • 1/2 teaspoon Vanilla extract, for plain yogurt
  • 1/4 cup Chopped almonds, walnuts, or pecans
  • 2 tablespoons Chia seeds

Method
 

Step-by-Step
  1. If using plain yogurt, stir in the honey or maple syrup and vanilla extract. Taste and add more sweetener if desired.
  2. Wash the berries and dry them thoroughly. Slice large strawberries into bite-size pieces.
  3. Spoon about 1/4 cup of yogurt into each of four glasses, jars, or bowls.
  4. Add a layer of berries, followed by about 3 tablespoons of granola. Repeat the yogurt, fruit, and granola layers until the containers are filled.
  5. Finish each parfait with a small spoonful of yogurt, a few berries, and the optional chopped nuts or chia seeds. Serve immediately for the crispest granola, or cover and refrigerate for up to 1 day with the final granola layer added just before serving.

Notes

For meal prep, keep the granola in a separate small container and assemble shortly before eating. If using frozen berries, thaw and drain them first so excess liquid does not make the yogurt watery. Optional chilling time is 15–30 minutes.
