- Place the dried cranberries and brandy in a small saucepan. Bring the mixture just to a boil, remove it from the heat, and let it stand for about 5 minutes so the cranberries absorb some of the brandy.
- Unfold the thawed puff pastry on a lightly floured surface. Roll it slightly, if necessary, into approximately a 10-inch square.
- Place the Brie in the center of the pastry and spoon the brandied cranberries over the top. Fold the pastry up and over the cheese, trimming away excess dough if needed.
- Pinch the pastry seams together and place the wrapped Brie seam-side down on a parchment-lined baking sheet. Brush the pastry evenly with the beaten egg.
- Bake at 400°F (200°C) for 20–25 minutes, or until the puff pastry is fully puffed and golden brown.
- Let the baked Brie stand for approximately 10 minutes before cutting. Serve warm with crackers, bread, or fruit.
Notes
If the filled pastry becomes soft, chill it briefly before baking so it seals more cleanly and holds its shape. Use a full wheel of Brie and avoid overfilling with cranberries. Optional variations may include 1–2 tablespoons of brown sugar, chopped pecans, or orange zest, but they are not required for the basic recipe.
