Blooming Baked Potato in the Air Fryer

Crispy, fluffy russet potatoes are cut into a blooming grid, seasoned, air-fried, and finished with cheddar, bacon, sour cream, and chives. This easy recipe makes two generously topped potatoes.

Potatoes
  • 2 Large russet potatoes, about 8-10 ounces each
Seasoning
  • 1 1/2 tablespoons Olive oil or melted butter
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Black pepper
Toppings
  • 1/2 cup Shredded cheddar cheese
  • 2 slices Cooked bacon, crumbled
  • 2 tablespoons Sour cream
  • 1 tablespoon Chopped chives or green onions

Method
 

Step-by-Step
  1. Wash and scrub the potatoes thoroughly, then pat them completely dry. Cut a thin slice from the bottom of each potato so it can sit flat and remain steady while you make the crosshatch cuts.
  2. Make several deep, parallel slices across each potato, stopping about 1/4 inch from the bottom. Turn the potato and make crosswise cuts to form a grid or blooming pattern, taking care not to cut all the way through.
  3. Gently fan open the cut sections with your fingers. Brush the potatoes thoroughly with olive oil or melted butter, working some into the openings.
  4. Mix the kosher salt, garlic powder, paprika, and black pepper in a small bowl. Sprinkle the seasoning over the potatoes and between the cuts.
  5. Preheat the air fryer to 400°F (200°C) if your model requires preheating. Place the potatoes cut-side up in the basket with space around them.
  6. Air-fry for 30–40 minutes, depending on the size of the potatoes and your air fryer. The centers should be fork-tender and the exposed edges should be lightly crisp.
  7. Sprinkle the cheddar over the potatoes during the final 2–3 minutes so it melts without burning. Finish with crumbled bacon, sour cream, and chopped chives or green onions before serving.

Notes

Russet potatoes provide the fluffiest centers and crispiest skins. For especially large potatoes, microwave them for 3–4 minutes before cutting and air-frying, then reduce the air-fryer time as needed and continue cooking until fork-tender. At 375°F (190°C), cooking generally takes about 40–45 minutes.
