A fast soy-Worcestershire steak marinade with garlic, lemon, Dijon, herbs, and brown sugar. It makes enough for about four steaks weighing approximately 1½–2 pounds total.

Ingredients
  

Steak Marinade
  • ½ cup Olive oil
  • ¼ cup Soy sauce
  • ¼ cup Worcestershire sauce
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Brown sugar
  • 4 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Whisk the olive oil, soy sauce, Worcestershire sauce, lemon juice, Dijon mustard, and brown sugar in a bowl until the mixture is well combined.
  2. Stir in the minced garlic, Italian seasoning, and freshly ground black pepper.
  3. Place approximately 1½–2 pounds of steaks in a resealable bag or shallow glass dish. Pour the marinade over the steaks and turn them to coat.
  4. Refrigerate the steaks for at least 30 minutes, preferably 2–8 hours. Turn them once or twice while they marinate.
  5. Remove the steaks from the marinade and pat them very dry. Discard the used marinade.
  6. Cook the steaks over high heat for approximately 8–12 minutes, depending on their thickness and the desired doneness. For medium-rare, remove them from the heat at about 125–130°F.
  7. Rest the cooked steaks for 5–10 minutes before slicing and serving.

Notes

Pat the steaks dry before cooking so they brown properly and do not cause excess flare-ups on a grill. Salt is usually unnecessary because soy sauce and Worcestershire sauce provide substantial seasoning. Do not marinate very tender steaks in this lemon-containing mixture for more than about 24 hours.
