Meatloaf
  • 1 1/2 pounds Ground turkey, preferably 93% lean
  • 1/2 cup Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 1/2 cup Plain breadcrumbs or panko
  • 1 Large egg
  • 1/3 cup Milk
  • 2 tablespoons Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
Glaze
  • 1/3 cup Ketchup
  • 2 tablespoons Brown sugar or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Apple cider vinegar or Worcestershire sauce

Method
 

Step-by-Step
  1. Heat the oven to 350°F. Line a rimmed baking sheet with parchment, or lightly grease a 9-by-5-inch loaf pan.
  2. Combine the breadcrumbs and milk in a large bowl and let them stand for 2–3 minutes so the crumbs soften.
  3. Add the ground turkey, onion, garlic, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, pepper, and optional parsley.
  4. Mix gently with clean hands or a fork just until combined. Avoid compacting or overworking the mixture.
  5. Shape the mixture into a loaf on the baking sheet, or place it in the prepared loaf pan.
  6. Stir together the glaze ingredients and spread about two-thirds over the top of the meatloaf.
  7. Bake for 50–60 minutes. Add the remaining glaze during the last 10–15 minutes if desired.
  8. Remove the meatloaf when the center reaches 165°F on an instant-read thermometer. Rest for 10 minutes before slicing.

Notes

For the juiciest result, use 93% lean ground turkey and mix only until the ingredients are incorporated. A free-form loaf on a parchment-lined sheet pan browns evenly and allows excess liquid to drain. Refrigerate leftovers promptly and reheat gently so the slices stay moist.
