  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 3 bananas Ripe bananas, mashed
  • 3/4 cup Granulated sugar
  • 1 egg Large egg, lightly beaten
  • 1/3 cup Unsalted butter, melted and slightly cooled
  • 1/2 cup Chopped walnuts or pecans

Step-by-Step
  1. Heat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.
  2. Whisk the all-purpose flour, baking soda, baking powder, and salt together in a medium bowl.
  3. In a separate bowl, combine the mashed bananas, granulated sugar, lightly beaten egg, and melted butter that has cooled slightly.
  4. Add the dry ingredients to the banana mixture and stir just until combined. A few small lumps are acceptable, so do not continue mixing once the flour disappears.
  5. Fold in the chopped walnuts or pecans gently and evenly.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds to three-quarters full.
  7. Bake for 18 to 22 minutes, or until the muffin tops are lightly browned and a toothpick inserted into the center comes out clean.
  8. Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack to finish cooling.

Notes

For the fullest banana flavor, use bananas with plenty of brown or black spotting. Toast the walnuts or pecans for a few minutes before chopping if desired. Optional additions include 1 teaspoon vanilla extract or 1/2 teaspoon cinnamon.
