- Heat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.
- Whisk the all-purpose flour, baking soda, baking powder, and salt together in a medium bowl.
- In a separate bowl, combine the mashed bananas, granulated sugar, lightly beaten egg, and melted butter that has cooled slightly.
- Add the dry ingredients to the banana mixture and stir just until combined. A few small lumps are acceptable, so do not continue mixing once the flour disappears.
- Fold in the chopped walnuts or pecans gently and evenly.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds to three-quarters full.
- Bake for 18 to 22 minutes, or until the muffin tops are lightly browned and a toothpick inserted into the center comes out clean.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack to finish cooling.
Notes
For the fullest banana flavor, use bananas with plenty of brown or black spotting. Toast the walnuts or pecans for a few minutes before chopping if desired. Optional additions include 1 teaspoon vanilla extract or 1/2 teaspoon cinnamon.
