- Heat the oven to 350°F. Grease and flour three 8- or 9-inch round cake pans, then line the bottoms with parchment if desired.
- Spread the chopped pecans on a baking sheet and toast for 8–10 minutes, stirring once, until fragrant. Cool completely and reserve about 1/2 cup for decorating if desired.
- Cream the softened butter, granulated sugar, and brown sugar for 3–4 minutes, until light and fluffy. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
- Whisk together the flour, baking powder, baking soda, and salt. Add the dry mixture to the butter mixture in three additions, alternating with the buttermilk in two additions, mixing only until combined.
- Fold in 1 cup of the cooled toasted pecans. Divide the batter evenly among the prepared pans.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool the cakes in their pans for 10 minutes, then turn them onto racks and cool completely.
- Beat the butter for 2–3 minutes until smooth. Gradually add the sifted confectioners' sugar, then add the vanilla and salt.
- Beat in the cream or milk 1 tablespoon at a time until the frosting is smooth and spreadable. Continue beating for 3–5 minutes to make it lighter.
- Place one cake layer on a serving plate, spread with frosting, and sprinkle with chopped pecans. Repeat with the remaining layers, frost the top and sides, and garnish with the reserved pecans.
Notes
For clean layers, chill the completely cooled cake layers for 20–30 minutes before frosting and apply a thin crumb coat first. The cake is best after resting for several hours or overnight. Keep covered at room temperature for up to 2 days or refrigerate for up to 5 days; bring refrigerated cake to room temperature before serving.
