A simple no-cook bread-dipping oil made with extra-virgin olive oil, garlic, dried herbs, and gentle spice. It makes about 3/4 cup, enough for 4–6 servings, and needs only a short resting period before serving.

Step-by-Step
  1. Add the extra-virgin olive oil to a shallow serving bowl or small dish. Stir in the finely minced or grated garlic, dried oregano, dried basil, dried parsley, crushed red-pepper flakes, black pepper, and sea salt.
  2. Mix in the Parmesan cheese if using. Let the oil stand for 10–15 minutes so the dried herbs soften and release more flavor into the oil.
  3. Taste the finished dipping oil and adjust the salt or red-pepper flakes if needed. Serve with crusty Italian bread, focaccia, or ciabatta, with balsamic vinegar offered separately or drizzled into individual dishes.
  4. For a warmer, more pronounced garlic flavor, gently warm the oil with the garlic and herbs over low heat for 2–3 minutes. Do not let the garlic brown, and cool the oil slightly before serving.

Notes

Use a mild or fruity extra-virgin olive oil rather than one that is aggressively bitter. Refrigerate leftovers promptly and use within 2–3 days because raw garlic stored in oil can pose a botulism risk. Do not store raw-garlic oil at room temperature.
