  • 1/2 cup Unsalted butter, softened

  • 1 1/2 cups Very ripe bananas, mashed
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
Cream Cheese Frosting
  • 8 ounces Full-fat cream cheese, softened
  • 1/2 cup Unsalted butter, softened
  • 3 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking pan.
  2. Beat the softened butter and granulated sugar until light and blended.
  3. Beat in the eggs, vanilla extract, and sour cream, then stir in the mashed bananas.
  4. Add the flour, baking soda, and salt. Mix only until the dry ingredients disappear.
  5. Spread the batter evenly in the prepared pan and bake for 25 to 30 minutes, until the center is set and a toothpick comes out clean or with a few moist crumbs.
  6. Cool the cake completely. Beat the cream cheese and butter until smooth, add the powdered sugar and vanilla, and beat until creamy and spreadable.
  7. Spread the frosting over the cooled cake. Refrigerate if it will not be served soon.

Notes

Use heavily speckled or nearly black bananas for the strongest flavor and best moisture. Bring the cream cheese and butter to room temperature for smooth frosting, and never frost the cake while it is warm.
