A colorful no-cook taco dip layered with refried beans, seasoned sour cream, guacamole, salsa, cheese, and fresh toppings. It is ready in about 15 to 20 minutes and serves a crowd.

Ingredients
  

Main Layers
  • 1 16-ounce can Refried beans
  • 1 cup Sour cream
  • 1 1-ounce packet Taco seasoning
  • 1 cup Prepared guacamole
  • 1 cup Salsa, preferably thick and drained if watery
  • 1 cup Shredded cheddar, Monterey Jack, or Mexican-blend cheese
Toppings and Serving
  • 1/2 cup Sliced black olives
  • 1/2 cup Diced tomatoes
  • 1/4 cup Sliced green onions, optional
  • as needed Tortilla chips

Method
 

Step-by-Step
  1. Spread the refried beans evenly over the bottom of a 9-inch pie dish or shallow serving platter.
  2. Stir the sour cream and taco seasoning together in a small bowl until smooth and evenly seasoned. Spread the mixture over the refried beans.
  3. Spoon the prepared guacamole over the sour cream layer. Spread it gently with the back of a spoon so the layers remain distinct.
  4. Spread the salsa evenly over the guacamole, making sure excess liquid has been drained if the salsa is watery.
  5. Sprinkle the shredded cheddar, Monterey Jack, or Mexican-blend cheese evenly across the salsa.
  6. Finish with sliced black olives, diced tomatoes, and optional sliced green onions.
  7. Serve immediately with tortilla chips, or cover and refrigerate for 30 minutes before serving.

Notes

Drain watery salsa and tomatoes to prevent a loose dip. For a thicker, richer variation, blend 4 ounces softened cream cheese with 1/2 cup sour cream, then add taco seasoning.
