  • 1/2 cup Butter, softened
  • 1 cup Granulated white sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Mashed ripe bananas, about 3 medium bananas

  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
Optional Addition
  • 1/2 cup Chopped walnuts

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9 x 5-inch loaf pan.
  2. Cream the softened butter and granulated sugar together until light and blended.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  4. Whisk the flour, baking soda, and salt together in a separate bowl.
  5. Add the dry ingredients to the banana mixture and stir just until combined. Fold in the walnuts if using, taking care not to overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the loaf in the pan for about 10 minutes, then remove it to a wire rack to cool further before slicing.

Notes

Use heavily speckled, very ripe bananas for the strongest flavor and a moist loaf. Stir only until the flour disappears, because overmixing can make the bread dense or tough. Let the loaf cool before slicing so the crumb can set.
