- Heat the oven to 350°F (175°C) and grease a 9 x 5-inch loaf pan.
- Cream the softened butter and granulated sugar together until light and blended.
- Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
- Whisk the flour, baking soda, and salt together in a separate bowl.
- Add the dry ingredients to the banana mixture and stir just until combined. Fold in the walnuts if using, taking care not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for about 10 minutes, then remove it to a wire rack to cool further before slicing.
Notes
Use heavily speckled, very ripe bananas for the strongest flavor and a moist loaf. Stir only until the flour disappears, because overmixing can make the bread dense or tough. Let the loaf cool before slicing so the crumb can set.
