- Heat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease the cups lightly.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl until evenly combined.
- In a separate bowl, whisk the egg, milk, oil or melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients. Stir gently just until no large streaks of flour remain; a slightly lumpy batter is exactly right.
- Fold in the optional blueberries, chocolate chips, chopped nuts, or diced fruit. If using berries or another moist add-in, toss it with 1 teaspoon of flour first.
- Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full. Sprinkle with coarse sugar if desired.
- Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack. Serve warm or cool completely before storing.
Notes
For slightly taller muffins, rest the batter for 5–10 minutes before baking. Do not open the oven during the first 15 minutes. Store cooled muffins in an airtight container at room temperature for a few days, or freeze them for longer storage.
