Banana Pudding Cupcakes

Moist banana-vanilla cupcakes are filled with creamy banana pudding, topped with homemade whipped cream, and finished with vanilla wafers and fresh banana slices.

Ingredients
  

Cupcakes
  • 1 box, about 15.25 ounces Yellow or vanilla cake mix
  • 1 package, 3.4 ounces Instant banana pudding mix
  • 4 Large eggs
  • 1/2 cup Neutral-flavored vegetable oil
  • 1 cup Whole milk
  • 1 cup, about 2 medium bananas Mashed ripe bananas
  • 1 teaspoon Vanilla extract
Cupcakes and Garnish
  • 24 cookies, plus extra if desired Vanilla wafer cookies
Banana Pudding Filling
  • 1 package, 3.4 ounces Instant banana pudding mix
  • 2 cups Cold whole milk
  • 1 cup, optional Whipped topping
  • 1–2 thinly sliced, optional Ripe bananas
Whipped Topping
  • 1 cup Cold heavy whipping cream
  • 1/4 cup Powdered sugar
  • 1 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Heat the oven to 350°F. Line two 12-cup muffin tins with paper liners, placing one vanilla wafer in the bottom of each liner if desired.
  2. Whisk the cake mix and one package of instant banana pudding mix together in a large bowl. Add the eggs, vegetable oil, whole milk, mashed bananas, and vanilla extract, then beat just until the batter is smooth.
  3. Divide the batter among the liners, filling each about two-thirds full. Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  4. Cool the cupcakes in the pans for about 5 minutes, then transfer them to a wire rack and cool completely before filling or frosting.
  5. Whisk the second package of instant banana pudding mix with 2 cups cold whole milk for about 2 minutes. Let it stand for 5 minutes to thicken, then fold in 1 cup whipped topping if you prefer a lighter filling.
  6. Cut a small cone from the center of each cooled cupcake or use a cupcake corer. Fill each cavity with banana pudding and replace the tops if desired.
  7. Beat the cold heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Pipe or spoon the whipped cream over each cupcake.
  8. Decorate with a vanilla wafer and, just before serving, a thin banana slice or crushed vanilla wafers. Refrigerate the cupcakes until ready to serve.

Notes

Use very ripe bananas with plenty of brown spotting for the strongest flavor. Do not cook the instant pudding mix. Cool cupcakes completely before filling or frosting, and store covered in the refrigerator for 1–2 days. Add banana slices shortly before serving to help prevent browning.
