Ingredients

Main Ingredients
  • 1 large head large green cabbage, about 2 to 2 1/2 pounds
Balsamic Honey Glaze
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Method

Step-by-Step
  1. Heat the oven to 400°F. Line a large baking sheet with parchment paper or lightly oil the surface.
  2. Remove any loose outer cabbage leaves. Slice the cabbage crosswise into steaks about 3/4 to 1 inch thick, keeping the core intact so each slice stays together.
  3. Whisk the olive oil, balsamic vinegar, honey, minced garlic, Dijon mustard, kosher salt, and black pepper in a small bowl until combined.
  4. Arrange the cabbage steaks in a single layer on the prepared baking sheet. Brush the tops generously with some of the balsamic honey mixture.
  5. Roast for 20 to 25 minutes, then carefully turn the steaks over. Brush the remaining sauce over the second side.
  6. Continue roasting for 15 to 20 minutes, until the edges are browned and slightly crisp and the centers are tender. For deeper browning, broil for 1 to 2 minutes at the end while watching closely.

Notes

Keep the cabbage slices thick and leave the core intact so they do not fall apart. Apply the honey-balsamic glaze in stages because honey can darken quickly. Refrigerate leftovers in an airtight container and reheat in a 400°F oven until warm.
