- Heat the oven to 400°F. Line a large baking sheet with parchment paper or lightly oil the surface.
- Remove any loose outer cabbage leaves. Slice the cabbage crosswise into steaks about 3/4 to 1 inch thick, keeping the core intact so each slice stays together.
- Whisk the olive oil, balsamic vinegar, honey, minced garlic, Dijon mustard, kosher salt, and black pepper in a small bowl until combined.
- Arrange the cabbage steaks in a single layer on the prepared baking sheet. Brush the tops generously with some of the balsamic honey mixture.
- Roast for 20 to 25 minutes, then carefully turn the steaks over. Brush the remaining sauce over the second side.
- Continue roasting for 15 to 20 minutes, until the edges are browned and slightly crisp and the centers are tender. For deeper browning, broil for 1 to 2 minutes at the end while watching closely.
Notes
Keep the cabbage slices thick and leave the core intact so they do not fall apart. Apply the honey-balsamic glaze in stages because honey can darken quickly. Refrigerate leftovers in an airtight container and reheat in a 400°F oven until warm.
