Bakery-Style Orange Cranberry Muffins at Home

Tender orange cranberry muffins made with melted butter, creamy yogurt or sour cream, fresh orange juice, and plenty of cranberries. A two-temperature baking method produces beautifully rounded bakery-style tops.

Ingredients
  

Dry Ingredients
  • 2 cups (250 g) All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Fine salt
Wet Ingredients
  • 1/2 cup (113 g) Unsalted butter, melted and slightly cooled
  • 3/4 cup (150 g) Granulated sugar
  • 2 Large eggs
  • 1/2 cup (120 g) Sour cream, plain yogurt, or Greek yogurt
  • 1/4 cup (60 ml) Freshly squeezed orange juice
  • 1 tablespoon Finely grated orange zest
  • 1 teaspoon Vanilla extract
Add-Ins and Topping
  • 1 1/2 cups (about 150 g) Fresh or frozen cranberries
  • 2-3 tablespoons Coarse sugar or turbinado sugar, optional

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners or grease each cup thoroughly.
  2. Whisk the flour, baking powder, baking soda, and salt together in a medium bowl until evenly distributed.
  3. Rub the orange zest into the granulated sugar with your fingertips. Whisk in the melted, slightly cooled butter, then add the eggs, sour cream or yogurt, orange juice, and vanilla.
  4. Add the dry ingredients to the wet ingredients and stir just until no dry flour remains. The batter may have a few small lumps; do not overmix.
  5. Fold in the fresh cranberries. If using frozen cranberries, add them directly from the freezer to help prevent excessive bleeding into the batter.
  6. Divide the batter evenly among the muffin cups, filling them nearly to the top. Sprinkle with coarse sugar or turbinado sugar if desired.
  7. Bake at 425°F for 5 minutes without opening the oven. Reduce the temperature to 350°F (175°C) and bake for another 15–17 minutes, until golden and a toothpick comes out clean or with a few moist crumbs.
  8. Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack. Serve warm or let them cool completely before storing.

Notes

Use fresh or frozen cranberries without thawing frozen berries. The high-temperature first stage encourages tall muffin domes, while the lower temperature finishes the centers without excessive browning. Store cooled muffins covered at room temperature for up to 2 days or refrigerate for longer storage.
