Ingredients
  

Pasta and Sauce
  • 1 pound Ziti or penne pasta
  • 2 tablespoons Olive oil
  • 1 Medium yellow onion, finely diced
  • 3-4 Garlic cloves, minced
  • 1 pound Ground beef, Italian sausage, or a combination
  • 24 ounces Marinara sauce
  • 28 ounces Crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Red-pepper flakes, optional
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Cheese Filling
  • 15 ounces Whole-milk ricotta cheese
  • 1 Large egg
  • 1 cup Grated Parmesan cheese, divided
  • 3 cups Shredded low-moisture mozzarella, divided
Finishing
  • 2 tablespoons Fresh parsley or basil, chopped, optional

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C) and lightly grease a 9-by-13-inch baking dish.
  2. Bring a large pot of well-salted water to a boil. Cook the ziti until just shy of al dente, usually about 2 minutes less than the package directions, then drain well.
  3. Heat the olive oil in a large skillet or Dutch oven. Cook the onion for 4–5 minutes until softened, add the garlic, and cook for about 30 seconds.
  4. Add the ground beef, Italian sausage, or combination and cook until browned, breaking it into small pieces. Drain excess fat if necessary.
  5. Stir in the marinara sauce, crushed tomatoes, Italian seasoning, red-pepper flakes, salt, and black pepper. Simmer for 10–15 minutes.
  6. Combine the ricotta, egg, 1/2 cup Parmesan, and about 1 cup mozzarella in a bowl.
  7. Toss the drained pasta with roughly two-thirds of the meat sauce.
  8. Layer half the pasta in the baking dish, spoon over half the ricotta mixture, and add some of the remaining sauce and mozzarella. Repeat with the remaining pasta, ricotta mixture, sauce, mozzarella, and remaining Parmesan.
  9. Cover tightly with foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, until bubbling and lightly browned.
  10. Rest the baked ziti for 10–15 minutes before serving. Garnish with chopped parsley or basil.

Notes

Cook the pasta slightly under al dente because it continues cooking in the oven. Covering the dish first keeps the pasta moist, while the uncovered finish browns the cheese. Resting for 10–15 minutes helps the layers set and makes cleaner portions.
