- Heat the oven to 350°F (175°C) and lightly grease a 6- or 12-cavity donut pan.
- Whisk the flour, granulated sugar, baking powder, and salt together in a large bowl.
- In a separate bowl, whisk together the melted, slightly cooled butter, egg, vanilla extract, and milk.
- Pour the wet mixture into the dry ingredients and stir only until no dry flour remains. Gently fold in the finely chopped strawberries without overmixing.
- Transfer the batter to a piping bag or zip-top bag, snip the corner, and pipe into the donut cavities, filling each about two-thirds to three-quarters full.
- Bake for 10 to 13 minutes, until the donuts are lightly golden and the tops spring back when touched.
- Cool the donuts in the pan for about 5 minutes, then transfer them to a wire rack and cool completely.
- Whisk the powdered sugar with the strawberry purée and optional lemon juice. Add milk, cream, or extra strawberry juice a little at a time until the glaze is thick but dip-able.
- Dip the completely cooled donuts into the glaze and let them stand for several minutes so the topping can set.
Notes
Finely chop the strawberries and blot away excess moisture before folding them into the batter. Do not overmix, and cool the donuts completely before glazing. These donuts are best eaten the day they are made because fresh strawberries add moisture.
