- Heat the oven to 350°F and grease a 9-by-13-inch baking dish.
- Cook the spaghetti in well-salted water until just shy of al dente, usually 1–2 minutes less than the package directions. Drain it well.
- Heat the olive oil in a large skillet. Cook the ground beef and chopped onion for 6–8 minutes, breaking up the meat, until the beef is browned and the onion is tender.
- Drain excess fat if necessary, then add the minced garlic and cook for about 30 seconds.
- Stir in the marinara sauce, undrained diced tomatoes, Italian seasoning, salt, and black pepper. Simmer the sauce for 5 minutes.
- In a large bowl, whisk the eggs with the Parmesan cheese. Add the drained spaghetti and toss until the strands are evenly coated.
- Spread about half of the meat sauce in the prepared baking dish. Add the spaghetti mixture and spoon the remaining sauce over the top.
- Sprinkle the shredded mozzarella evenly over the casserole.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10–15 minutes, until the cheese is melted and lightly browned.
- Let the casserole rest for 10 minutes before slicing. Garnish with chopped fresh parsley if desired and serve warm.
Notes
Cook the spaghetti 1–2 minutes less than the package directions so it does not become mushy in the oven. Covering the casserole during the first part of baking helps keep the pasta moist. Rest for 10 minutes before serving for cleaner slices.
