  • 4 Boneless, skinless chicken breasts, about 6–8 ounces each
  • 1 tablespoon Olive oil
Seasoning
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Toppings
  • 1 cup Pizza sauce or low-sugar marinara sauce
  • 1 1/2 cups Shredded low-moisture mozzarella
  • 24–32 slices Small pepperoni slices
Optional Toppings
  • 2 tablespoons Grated Parmesan
  • As desired Red-pepper flakes

Method
 

Step-by-Step
  1. Heat the oven to 400°F (200°C). Lightly grease a 9-by-13-inch baking dish or a rimmed baking sheet.
  2. If the chicken breasts are very thick, slice them horizontally or pound them to an even thickness of approximately 1/2 to 3/4 inch. Pat the chicken dry.
  3. Rub both sides of the chicken with olive oil. Season both sides with Italian seasoning, garlic powder, kosher salt, and black pepper.
  4. Arrange the chicken in the prepared baking dish. Spoon approximately 1/4 cup of pizza sauce over each breast.
  5. Sprinkle the mozzarella over the chicken and arrange 24 to 32 pepperoni slices on top. Add Parmesan or red-pepper flakes if desired.
  6. Bake uncovered for 20 to 30 minutes, until the thickest part of the chicken reaches 165°F (74°C) and the cheese is melted and lightly browned.
  7. Rest the chicken for 5 minutes before serving. Spoon any sauce from the dish over the chicken.

Notes

Pound or butterfly thick chicken breasts so they cook evenly. Low-moisture shredded mozzarella generally browns better than fresh mozzarella. For darker cheese, broil for 1 to 2 minutes at the end, watching closely because pepperoni can burn quickly.
