- Heat the oven to 400°F (200°C). Lightly grease a 9-by-13-inch baking dish or a rimmed baking sheet.
- If the chicken breasts are very thick, slice them horizontally or pound them to an even thickness of approximately 1/2 to 3/4 inch. Pat the chicken dry.
- Rub both sides of the chicken with olive oil. Season both sides with Italian seasoning, garlic powder, kosher salt, and black pepper.
- Arrange the chicken in the prepared baking dish. Spoon approximately 1/4 cup of pizza sauce over each breast.
- Sprinkle the mozzarella over the chicken and arrange 24 to 32 pepperoni slices on top. Add Parmesan or red-pepper flakes if desired.
- Bake uncovered for 20 to 30 minutes, until the thickest part of the chicken reaches 165°F (74°C) and the cheese is melted and lightly browned.
- Rest the chicken for 5 minutes before serving. Spoon any sauce from the dish over the chicken.
Notes
Pound or butterfly thick chicken breasts so they cook evenly. Low-moisture shredded mozzarella generally browns better than fresh mozzarella. For darker cheese, broil for 1 to 2 minutes at the end, watching closely because pepperoni can burn quickly.
