- Heat the oven to 350°F (175°C). Grease a 12-cup muffin pan thoroughly or line it with silicone or parchment liners.
- In a medium bowl, combine the rolled oats, baking powder, cinnamon, and fine salt.
- In a second bowl, whisk the eggs, milk, applesauce, maple syrup, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir just until combined. Fold in the berries and chopped nuts, if using.
- Let the mixture stand for 5 minutes so the oats can absorb some of the liquid. Divide it evenly among the muffin cups, filling each about three-quarters full.
- Bake for 25 to 30 minutes, until the centers are set and the tops are lightly golden.
- Cool the oatmeal cups in the pan for 5 to 10 minutes, then transfer them to a wire rack to finish cooling.
Notes
Grease the muffin pan very well when baking without liners because oats can stick. For a banana version, replace the applesauce with 1 large very ripe mashed banana. To freeze, cool completely, wrap individually, and freeze for up to about 3 months; reheat in the microwave for 30 to 60 seconds.
