Apple Pie Tacos

Crisp cinnamon-sugar flour tortilla shells are filled with warm homemade apple pie filling and served with ice cream, whipped cream, or caramel sauce. This recipe makes 10–12 fun dessert tacos.

Ingredients
  

Apple Filling
  • 4 apples Medium baking apples, such as Granny Smith, Honeycrisp, or a combination, peeled, cored, and diced small
  • 2 tablespoons Unsalted butter
  • 1/3 cup Packed light brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg, optional
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 1 teaspoon Vanilla extract, optional
Taco Shells
  • 10-12 tortillas Small flour tortillas, approximately 6 inches in diameter
  • 4 tablespoons Unsalted butter, melted
  • 1/2 cup Granulated sugar
  • 1 1/2 teaspoons Ground cinnamon
For Serving
  • As needed Vanilla ice cream or whipped cream
  • As needed Caramel sauce, optional

Method
 

Step-by-Step
  1. Melt 2 tablespoons butter in a large skillet over medium heat. Add the diced apples, brown sugar, 1 teaspoon cinnamon, optional nutmeg, and lemon juice, then cook for 6–8 minutes, stirring occasionally, until tender but not mushy.
  2. Stir the cornstarch and water together in a small bowl to make a slurry. Add it to the skillet and cook for 1–2 minutes, stirring, until the apple juices thicken; stir in vanilla if using, then cool the filling slightly.
  3. Heat the oven to 375°F (190°C). Brush both sides of each flour tortilla lightly with the 4 tablespoons melted butter, then coat both sides in the mixture of granulated sugar and 1 1/2 teaspoons cinnamon.
  4. Fold each tortilla into a taco shape and place it over the bars of an oven rack, or support it in an inverted muffin tin. Bake for 8–12 minutes, until crisp and lightly browned, then cool for several minutes so the shells firm.
  5. Spoon the warm apple filling into the crisp shells. Serve immediately with vanilla ice cream, whipped cream, and optional caramel sauce.

Notes

Dice apples about 1/4 inch so they cook evenly and fit neatly inside the shells. Remove tortillas when just golden and pliable because they become crisper as they cool. Use a firm apple or a mixture of tart and sweet apples for the best texture.
