Ingredients
  

Strawberry Filling
  • 2 pounds Fresh strawberries, hulled and sliced
  • 1/3 cup Granulated sugar
  • 2 tablespoons All-purpose flour or cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
Crisp Topping
  • 1 cup Old-fashioned rolled oats
  • 3/4 cup All-purpose flour
  • 3/4 cup Packed light brown sugar
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, melted or cut into small pieces

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly butter an 8-inch square baking dish or similar 2-quart dish.
  2. Hull and slice the strawberries, keeping the slices moderately thick. Toss them with the granulated sugar, flour or cornstarch, lemon juice, vanilla extract, and pinch of salt.
  3. Transfer the seasoned strawberries to the prepared baking dish and spread them into an even layer.
  4. In a separate bowl, stir together the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt.
  5. Work in the butter until moist, irregular crumbs form, or stir in melted butter until the dry ingredients are evenly coated.
  6. Scatter the topping evenly over the strawberries, covering the fruit from edge to edge.
  7. Bake for 35–45 minutes, until the fruit bubbles around the edges and the topping is golden brown.
  8. Cool for at least 10–15 minutes before serving so the strawberry juices can thicken.

Notes

Use ripe but firm strawberries and old-fashioned oats for the best texture. Frozen strawberries may be used if thawed and drained first. Store leftovers covered in the refrigerator and reheat gently before serving.
