Air Fryer Fish Sticks

Homemade cod fish sticks are coated in crisp Parmesan panko and air fried until golden brown. They are ready in about 30 minutes and make a family-friendly meal or easy seafood snack.

  • 1 pound Boneless, skinless cod or other firm white fish
Flour Mixture
  • 1/2 cup All-purpose flour
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Egg Mixture
  • 2 eggs Large eggs
Panko Mixture
  • 1 cup Panko breadcrumbs
  • 1/4 cup Finely grated Parmesan cheese
  • 1 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Kosher salt
For Cooking
  • As needed Cooking spray or olive oil spray

Method
 

Step-by-Step
  1. Pat the fish dry and cut it into about 16 evenly sized sticks, each approximately 1 inch wide. Drying the fish helps the flour and breading cling to the surface.
  2. Set out three shallow bowls. Stir together the flour, 1/4 teaspoon kosher salt, and black pepper in the first bowl; beat the eggs in the second; and combine panko, Parmesan, paprika, garlic powder, and the remaining 1/4 teaspoon salt in the third.
  3. Coat each fish stick in the flour, shaking off excess, then dip it into the beaten egg. Press it firmly into the panko mixture so all sides are covered.
  4. Preheat the air fryer to 400°F if your model requires preheating. Lightly spray the basket, arrange the fish in a single layer with space between pieces, and lightly spray the tops.
  5. Air fry for 4–6 minutes, turn the fish sticks carefully, lightly spray the second side, and cook for another 4–6 minutes. Check the thickest piece with an instant-read thermometer; the fish is ready when opaque and 145°F internally.

Notes

Do not overcrowd the basket; cook in batches when needed. Thicker fish sticks may need a few additional minutes. Serve immediately with tartar sauce, ketchup, ranch dressing, or lemon wedges.
