- Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes if your model requires preheating.
- Pat the chicken dry and cut it into evenly sized 1-inch pieces. Prepare the broccoli, zucchini, and red bell pepper so the vegetables are ready to cook at the same time.
- Add the chicken and vegetables to a bowl. Toss with olive oil, Italian seasoning, garlic powder, paprika, kosher salt, and black pepper until everything is evenly coated.
- Arrange the mixture in the air-fryer basket in a mostly single layer. Avoid overcrowding and cook in two batches if needed.
- Air-fry at 400°F for 10 to 12 minutes, shaking the basket or turning the ingredients halfway through cooking.
- Check the thickest chicken piece with an instant-read thermometer. Remove the food when the chicken reaches 165°F (74°C), then serve immediately with lemon wedges or grated Parmesan if desired.
Notes
For the best browning, leave space between pieces and cook in two batches when necessary. Chicken thighs can replace breast meat but generally need a few additional minutes. Refrigerate leftovers promptly and reheat in the air fryer until hot.
