- Beat the softened cream cheese, 1/4 cup granulated sugar, vanilla extract, and sour cream in a bowl until smooth.
- Place about 2–3 tablespoons of cheesecake filling in the center of each tortilla. Add a small spoonful of fruit filling if desired.
- Fold the tortilla sides inward, then roll tightly from the bottom to form a sealed parcel. Set each chimichanga seam-side down.
- Brush each assembled chimichanga with melted butter.
- Mix 1/2 cup granulated sugar and cinnamon in a shallow bowl. Roll or sprinkle the buttered chimichangas in the cinnamon sugar.
- Preheat the air fryer to 350°F (175°C), if your model requires preheating.
- Arrange the chimichangas in a single layer, seam-side down, leaving space between them.
- Air fry at 350°F for 8–10 minutes, turning once halfway through if needed, until crisp and golden.
- Rest the chimichangas for 3–5 minutes before serving because the filling will be very hot.
Notes
Use softened full-fat cream cheese for a smooth filling. Do not overfill, and keep the folds tight to reduce leaking. Air fryer models vary, so begin checking at 7–8 minutes. If the tortillas brown too quickly, reduce the temperature to 325°F (165°C).
