- Lightly grease a wide microwave-safe mug or small ramekin. Beat the egg, mayonnaise, vanilla extract, and sweetener directly in the mug until smooth.
- Add the almond flour, coconut flour, cocoa powder, baking powder, and salt. Stir thoroughly until no dry pockets remain.
- Microwave on high for 60 seconds. Check the center, then continue in 10- to 15-second intervals until the cake is set but still moist; most microwaves take 75 to 90 seconds.
- Let the cake stand for about 1 minute before eating. Residual heat will finish setting the center without requiring the cake to be cooked completely dry.
Notes
Use full-fat mayonnaise without added sugar for the moistest texture. Do not overcook, since microwave cakes continue cooking as they rest. For a vanilla version, omit the cocoa powder and add 1 more tablespoon of almond flour. If the batter is unusually thick, stir in 1 teaspoon unsweetened almond milk.
