- Whisk the sugar, cocoa powder, salt, and water together in a small saucepan until smooth. Sift the cocoa powder first if it contains visible clumps.
- Set the saucepan over medium heat and bring the mixture to a gentle boil, whisking frequently so the cocoa and sugar distribute evenly.
- Reduce the heat slightly and simmer for about 1–2 minutes, continuing to whisk, until the sugar dissolves and the sauce looks smooth and glossy. Do not overcook because the sauce thickens more as it cools.
- Remove the saucepan from the heat and stir in the vanilla extract. Adding it off the heat helps preserve its warm, fragrant aroma.
- Serve the sauce warm or let it cool to room temperature before using. Cover and refrigerate leftovers for up to about 2 weeks, then rewarm gently if needed.
Notes
Natural unsweetened cocoa powder gives the sauce a bright, classic chocolate flavor, while Dutch-process cocoa creates a darker, smoother-tasting sauce. Store covered in the refrigerator and rewarm gently if the sauce becomes too thick.
