- Heat the oven to 350°F (175°C). Grease or line a small 8 1/2 x 4 1/2-inch loaf pan with parchment, leaving a little overhang to make the baked loaf easy to lift out.
- Mash the very ripe bananas in a mixing bowl until mostly smooth. A few small soft pieces are fine and will add little pockets of banana flavor.
- Whisk the eggs and smooth peanut butter or almond butter into the mashed bananas until the mixture is evenly combined and creamy.
- Stir in the baking soda and cinnamon just until incorporated. Avoid overmixing so the loaf keeps a tender texture.
- Pour the batter into the prepared pan and bake for 35 to 45 minutes, or until the center is set and a toothpick comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for about 10 minutes, then transfer it to a rack. Let it cool for at least another 15 to 20 minutes before slicing, since the crumb firms as it cools.
Notes
Use heavily spotted bananas for the best sweetness and moisture. If the top browns before the center is finished, tent the loaf loosely with foil during the final 10 minutes of baking. For the cleanest slices, cool the loaf completely.
