  • 1 cup (226 g) Butter, melted
  • 2 cups (about 200-220 g) Graham cracker crumbs
  • 2 cups (about 240 g) Powdered sugar
Peanut Butter Mixture
  • 1 cup (250-260 g) Creamy peanut butter, divided
Chocolate Topping
  • 1 1/2 cups (about 255 g) Semisweet chocolate chips

Method
 

Step-by-Step
  1. Line a 9 x 13-inch baking pan with parchment paper, leaving enough overhang on the sides to lift the chilled bars out later.
  2. Stir together the melted butter, graham cracker crumbs, powdered sugar, and 3/4 cup peanut butter until evenly combined.
  3. Press the mixture firmly and evenly into the prepared pan, paying special attention to the corners.
  4. Melt the chocolate chips with the remaining 1/4 cup peanut butter using short microwave intervals and frequent stirring, or use a gentle double boiler.
  5. Spread the chocolate mixture over the peanut butter base and smooth the surface.
  6. Refrigerate for about 1 hour, until firm. Lift the slab from the pan using the parchment, let it stand at room temperature for 5-10 minutes, and cut into squares with a warm, dry sharp knife.

Notes

Press the base very firmly so the bars hold together. Do not overheat the chocolate; use 20-30-second microwave bursts and stir often. Store covered in the refrigerator for the firmest texture.
