- Heat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Pat the chicken dry. If the breasts are thick or uneven, pound them to an even thickness of about 3/4 inch.
- Stir the mayonnaise and finely grated Parmesan together until smooth and evenly combined.
- Arrange the chicken on the prepared baking sheet. Spread the Parmesan-mayonnaise mixture evenly over the top of each breast.
- Sprinkle the seasoned Italian breadcrumbs over the coating, pressing gently so they adhere.
- Bake for 20–25 minutes, depending on thickness, until the topping is golden and the thickest part of the chicken reaches 165°F (74°C).
- Remove the chicken from the oven and let it rest for about 5 minutes before serving.
Notes
Use finely grated Parmesan for a smoother topping and more even crust. Pound uneven chicken breasts to about 3/4 inch and use an instant-read thermometer so the chicken can be removed as soon as it reaches 165°F (74°C), helping prevent dry meat.
