- Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Stir the peanut butter, sugar, egg, and vanilla extract together until a smooth, thick dough forms.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each portion.
- Flatten each mound with a fork, making a crisscross pattern across the top.
- Bake for 8–12 minutes, removing the cookies when the edges are set but the centers still look slightly soft.
- Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a wire rack to finish cooling and firming.
Notes
Use regular conventional peanut butter for the most predictable dough. If the dough feels difficult to scoop or you prefer thicker cookies, chill it for 20–30 minutes before shaping. Do not overbake.
