30-Minute Sausage Stuffed Shells

Jumbo pasta shells are filled with creamy ricotta, Italian sausage, Parmesan, and herbs, then baked in marinara sauce beneath melted mozzarella. This cozy casserole serves 4 to 6 people and is ready in about 30 to 40 minutes.

  • 1 pound Bulk Italian sausage, mild or hot
  • 1 small Small onion, finely chopped
  • 2 cloves Garlic cloves, minced

  • 24 ounces Marinara or pasta sauce
  • 15 ounces Whole-milk ricotta cheese
  • 1/2 cup Grated Parmesan cheese
  • 1 1/2 to 2 cups Shredded mozzarella cheese
Seasonings
  • 1 large Large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Garnish
  • 2 tablespoons Fresh parsley or basil, chopped

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Cook the jumbo shells in salted boiling water until just shy of tender, usually 1 to 2 minutes less than the package directions. Drain and rinse briefly with cool water, then keep them out of the water so they do not become soggy.
  3. Brown the Italian sausage in a large skillet over medium-high heat. Add the chopped onion and cook for 3 to 4 minutes, then stir in the garlic and cook for about 30 seconds; drain excess fat if needed.
  4. Mix the ricotta, egg, Parmesan, Italian seasoning, kosher salt, and black pepper in a bowl. Stir in approximately half of the cooked sausage mixture.
  5. Spread about 1 cup of marinara in the prepared dish. Fill each shell with roughly 2 tablespoons of the ricotta-sausage filling and arrange the shells filling side up.
  6. Spoon the remaining marinara over the stuffed shells and sprinkle with 1 1/2 to 2 cups of shredded mozzarella.
  7. Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for another 5 minutes, or until the cheese is melted and bubbling.
  8. Rest the casserole briefly, then garnish with chopped parsley or basil before serving.

Notes

Cook the shells slightly underdone because they continue cooking in the oven and are less likely to tear during filling. A piping bag or large zip-top bag with one corner snipped off makes filling quick and tidy. Store leftovers covered in the refrigerator and reheat until hot.
