- Place the berries and lemon juice in a large, wide, deep microwave-safe bowl. Microwave uncovered on HIGH for 3 minutes; if using frozen berries, stir once after about 2 minutes if needed.
- Carefully remove the hot bowl and mash the softened berries with a fork or potato masher. Leave some pieces intact for a chunky texture, or mash more thoroughly for a smoother spread.
- Stir in 1 tablespoon chia seeds. Add the vanilla, liquid stevia, or maple syrup if desired, remembering that the sweeteners are optional and should be omitted for a strictly no-added-sugar jam.
- Let the mixture stand for 5–10 minutes, stirring once or twice as it thickens. Transfer the jam to a clean jar, cool it, cover it, and refrigerate.
Notes
Use 1 1/2 tablespoons chia seeds for a firmer jam. If the cooled jam is too loose, stir in another 1/2 teaspoon chia seeds and wait 5 minutes; if it is too thick, mix in 1–2 teaspoons water or lemon juice. Refrigerate for up to about 1 week. This is a refrigerator jam, not a shelf-stable preserve.
