3-Minute No-Sugar Microwave Jam

A quick refrigerator jam made with berries, lemon juice, and chia seeds instead of granulated sugar. It takes about 10–15 minutes from start to finish and makes approximately 1 cup.

  • 2 cups Fresh or frozen berries
  • 1 tablespoon Chia seeds
  • 1 tablespoon Fresh lemon juice
Optional Ingredients
  • 1/2 teaspoon Vanilla extract
  • A few drops Liquid stevia
  • 1-2 teaspoons Maple syrup

Method
 

Step-by-Step
  1. Place the berries and lemon juice in a large, wide, deep microwave-safe bowl. Microwave uncovered on HIGH for 3 minutes; if using frozen berries, stir once after about 2 minutes if needed.
  2. Carefully remove the hot bowl and mash the softened berries with a fork or potato masher. Leave some pieces intact for a chunky texture, or mash more thoroughly for a smoother spread.
  3. Stir in 1 tablespoon chia seeds. Add the vanilla, liquid stevia, or maple syrup if desired, remembering that the sweeteners are optional and should be omitted for a strictly no-added-sugar jam.
  4. Let the mixture stand for 5–10 minutes, stirring once or twice as it thickens. Transfer the jam to a clean jar, cool it, cover it, and refrigerate.

Notes

Use 1 1/2 tablespoons chia seeds for a firmer jam. If the cooled jam is too loose, stir in another 1/2 teaspoon chia seeds and wait 5 minutes; if it is too thick, mix in 1–2 teaspoons water or lemon juice. Refrigerate for up to about 1 week. This is a refrigerator jam, not a shelf-stable preserve.
