- Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef and diced onion, then cook for 4–5 minutes, breaking up the beef as it browns and the onion softens.
- Add the minced garlic and taco seasoning to the browned beef mixture. Stir for about 30 seconds, just until the garlic smells fragrant and the seasoning coats the meat.
- Stir in the undrained diced tomatoes, tomato sauce, beef broth, and uncooked short pasta. Bring the mixture to a boil, stirring well so the pasta is distributed through the liquid.
- Reduce the heat to medium-low, cover, and simmer for 10–15 minutes. Stir every few minutes to prevent sticking, and continue cooking until the pasta is tender and most of the liquid has been absorbed.
- Remove the skillet from the heat and stir in 1 to 1½ cups of shredded cheese until melted and creamy. Let the pasta stand for 2–3 minutes, then add your favorite toppings and serve immediately.
Notes
Freshly shredded cheese usually melts more smoothly than pre-shredded cheese. If the pasta absorbs the liquid before it becomes tender, add 1/4 cup additional broth or water at a time and continue cooking. Stir periodically during the covered simmer, especially with small pasta shapes.
